Ingredients:
- 2 salmon fillets, skinless
- 1 sheet puff pastry, thawed
- 2 tablespoons Dijon mustard
- 1 egg, beaten
- 1/2 cup spinach, sautéed
- 1/4 cup cream cheese
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/2 teaspoon garlic, minced
Directions:
- Preheat oven to 400°F (200°C).
- Season salmon fillets with salt and pepper.
- Spread a thin layer of Dijon mustard on top of each fillet.
- Sauté spinach with garlic in olive oil until wilted, then mix with cream cheese.
- Cut the puff pastry sheet in half. Place half of the spinach and cream cheese mixture on each puff pastry piece, then top with a salmon fillet.
- Fold the pastry over the salmon and seal the edges. Brush with beaten egg.
- Bake for 20-25 minutes, or until the pastry is golden and puffed.
