Salmon Wellington

Ingredients:

  • 2 salmon fillets, skinless
  • 1 sheet puff pastry, thawed
  • 2 tablespoons Dijon mustard
  • 1 egg, beaten
  • 1/2 cup spinach, sautéed
  • 1/4 cup cream cheese
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic, minced

Directions:

  1. Preheat oven to 400°F (200°C).
  2. Season salmon fillets with salt and pepper.
  3. Spread a thin layer of Dijon mustard on top of each fillet.
  4. Sauté spinach with garlic in olive oil until wilted, then mix with cream cheese.
  5. Cut the puff pastry sheet in half. Place half of the spinach and cream cheese mixture on each puff pastry piece, then top with a salmon fillet.
  6. Fold the pastry over the salmon and seal the edges. Brush with beaten egg.
  7. Bake for 20-25 minutes, or until the pastry is golden and puffed.
