Ingredients:
- 4 cups all-purpose flour
- 4 tablespoons white sugar
- 1 teaspoon baking soda
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup buttermilk
- 1 egg
- 3/4 cup raisins
Directions:
- Preheat your oven to 375°F (190°C). Lightly grease a round cake pan or cast iron skillet.
- In a large bowl, combine flour, sugar, baking soda, baking powder, and salt.
- Cut in the softened butter until the mixture resembles coarse crumbs.
- In a separate bowl, beat the egg with buttermilk, then add to the flour mixture. Stir in the raisins.
- Knead the dough lightly (do not over-knead), then shape it into a round loaf. Place the loaf in the prepared pan or skillet.
- With a sharp knife, make an X across the top of the loaf.
- Bake in the preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
- Let it cool on a wire rack before slicing.
