Ingredients:
- 1 lb ground chicken
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh breadcrumbs
- 1 large egg
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 1 bunch broccolini, trimmed
- 2 tbsp olive oil
- Salt and pepper, to taste
Directions:
- Preheat oven to 400ยฐF (200ยฐC).
- In a large bowl, combine ground chicken, ricotta, Parmesan, breadcrumbs, egg, garlic, salt, pepper, and oregano. Mix well until evenly combined.
- Form the mixture into meatballs and place on a baking sheet.
- Toss broccolini with olive oil, salt, and pepper in a separate bowl, then spread around the meatballs on the baking sheet.
- Bake for 20-25 minutes, or until meatballs are golden and cooked through.
- Serve meatballs with roasted broccolini on the side.
