– 4 boneless, skinless chicken breasts
– 2 tablespoons olive oil
– Salt and pepper, to taste
– 1/2 cup chicken broth
– 1/2 cup heavy cream
– 2 tablespoons Dijon mustard
– 2 tablespoons whole grain mustard
– 1 tablespoon unsalted butter
– 1 small shallot, finely chopped
– 2 cloves garlic, minced
– Fresh thyme or parsley, chopped (for garnish)

1. Season the chicken breasts with salt and pepper.
2. Heat the olive oil in a large skillet over medium-high heat.
3. Add the chicken breasts to the skillet and cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
4. In the same skillet, add the butter and allow it to melt. Add the chopped shallot and garlic, sautéing for 2-3 minutes until fragrant and softened.
5. Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet.
6. Stir in the heavy cream, Dijon mustard, and whole grain mustard. Bring the mixture to a simmer and let it cook for 5-7 minutes, or until the sauce has thickened.
7. Return the chicken breasts to the skillet, spooning the sauce over them. Let them cook for an additional 2-3 minutes to heat through.
8. Garnish with fresh thyme or parsley before serving.
