Spaghetti & Spinach with Sun-Dried Tomato Cream Sauce
Creamy Sun-Dried Tomato Spinach Spaghetti

– 12 oz spaghetti
– 2 tablespoons olive oil
– 4 cloves garlic, minced
– 1/2 cup sun-dried tomatoes, chopped
– 1 cup heavy cream
– 1/2 cup grated Parmesan cheese
– 4 cups fresh spinach, roughly chopped
– 1/4 teaspoon red pepper flakes (optional)
– Salt and pepper to taste
– Fresh basil, chopped (for garnish)

1. Cook the spaghetti according to the package instructions until al dente. Drain and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes, or until fragrant.
3. Add the chopped sun-dried tomatoes to the skillet and cook for another 2-3 minutes.
4. Pour in the heavy cream and bring to a simmer. Cook for 4-5 minutes, stirring occasionally, until the sauce starts to thicken.
5. Stir in the grated Parmesan cheese until melted and combined.
6. Add the fresh spinach and cook until wilted, about 2 minutes.
7. Season with red pepper flakes, salt, and pepper to taste.
8. Add the cooked spaghetti to the skillet and toss to coat with the creamy sauce.
9. Garnish with fresh basil and serve immediately.
