Ingredients:
- 1 cup yellow cornmeal
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 2 teaspoons salt
- 1/2 cup sugar
- 2 large eggs
- 2 cups milk
- 1/4 cup vegetable oil
- 1 pound crawfish tails, cleaned
- 1 pound shrimp, peeled and deveined
- 1 cup onion, finely chopped
- 1/2 cup green bell pepper, finely chopped
- 1/2 cup celery, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 1/4 cup fresh parsley, chopped
- 2 cups chicken broth
Directions:
- Preheat oven to 375°F (190°C).
- In a large bowl, combine cornmeal, flour, baking powder, salt, and sugar.
- In another bowl, beat eggs, milk, and vegetable oil. Pour into the dry ingredients and stir until just mixed.
- Pour batter into a greased 9×13 inch baking dish and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool, then crumble.
- In a large skillet over medium heat, sauté onion, bell pepper, celery, and garlic until softened. Add crawfish, shrimp, Cajun seasoning, and parsley. Cook for about 5 minutes, or until seafood is cooked through.
- Preheat oven to 350°F (175°C).
- In a large bowl, mix the crumbled cornbread with the seafood mixture. Gradually add chicken broth until the mixture is moist but not soggy.
- Transfer to a greased baking dish and bake for 30-35 minutes, or until the top is golden brown.
