Seafood Cornbread Dressing

Ingredients:

  • 1 cup yellow cornmeal
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 teaspoons salt
  • 1/2 cup sugar
  • 2 large eggs
  • 2 cups milk
  • 1/4 cup vegetable oil
  • 1 pound crawfish tails, cleaned
  • 1 pound shrimp, peeled and deveined
  • 1 cup onion, finely chopped
  • 1/2 cup green bell pepper, finely chopped
  • 1/2 cup celery, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1/4 cup fresh parsley, chopped
  • 2 cups chicken broth

Directions:

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine cornmeal, flour, baking powder, salt, and sugar.
  3. In another bowl, beat eggs, milk, and vegetable oil. Pour into the dry ingredients and stir until just mixed.
  4. Pour batter into a greased 9×13 inch baking dish and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool, then crumble.
  5. In a large skillet over medium heat, sauté onion, bell pepper, celery, and garlic until softened. Add crawfish, shrimp, Cajun seasoning, and parsley. Cook for about 5 minutes, or until seafood is cooked through.
  6. Preheat oven to 350°F (175°C).
  7. In a large bowl, mix the crumbled cornbread with the seafood mixture. Gradually add chicken broth until the mixture is moist but not soggy.
  8. Transfer to a greased baking dish and bake for 30-35 minutes, or until the top is golden brown.
