Roasted Garlic-Parmesan Zucchini, Squash and Tomatoes
Garlic-Parmesan Roasted Veggies Medley

– 2 medium zucchinis, sliced
– 2 medium yellow squashes, sliced
– 1 pint cherry tomatoes, halved
– 3 cloves garlic, minced
– 1/4 cup grated Parmesan cheese
– 2 tablespoons olive oil
– 1 teaspoon dried Italian seasoning
– Salt and pepper to taste
– Fresh basil, chopped (for garnish)

1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a large bowl, combine the sliced zucchinis, yellow squashes, cherry tomatoes, minced garlic, olive oil, Italian seasoning, salt, and pepper. Toss to coat the vegetables evenly.
3. Spread the vegetables in a single layer on the prepared baking sheet.
4. Sprinkle the grated Parmesan cheese evenly over the vegetables.
5. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly golden.
6. Remove from the oven and let cool for a few minutes before serving.
7. Garnish with chopped fresh basil before serving.
