Gourmet Roasted Beet and Goat Cheese Salad with Fresh Arugula

– 4 medium beets, roasted and sliced
– 6 cups fresh arugula
– 1/2 cup goat cheese, crumbled
– 1/2 cup walnut halves, toasted
– 1/4 cup red onion, thinly sliced
– 1/4 cup balsamic vinaigrette
– Salt and pepper to taste

1. Preheat oven to 400°F (200°C). Wrap the beets in aluminum foil and roast for 45-60 minutes, or until tender. Allow beets to cool, then peel and slice.
2. In a large salad bowl, combine the fresh arugula, roasted and sliced beets, crumbled goat cheese, toasted walnut halves, and thinly sliced red onion.
3. Drizzle the balsamic vinaigrette over the salad and toss gently to coat all ingredients evenly.
4. Season with salt and pepper to taste.
5. Serve immediately and enjoy the vibrant flavors and textures.
