Fresh Peach and Watercress Delight with Feta, Toasted Pistachios, and Lemon-Basil Dressing

– 4 ripe peaches, sliced
– 4 cups watercress, washed and trimmed
– 1/2 cup feta cheese, crumbled
– 1/4 cup toasted pistachios, roughly chopped
– 1/4 cup fresh basil, chopped
– 1 lemon, juiced
– 1/4 cup extra-virgin olive oil
– 1 tablespoon honey
– Salt and pepper to taste

1. In a small bowl, whisk together the lemon juice, olive oil, honey, salt, and pepper to make the dressing. Set aside.
2. In a large salad bowl, combine the watercress, sliced peaches, crumbled feta, and toasted pistachios.
