Garlic Green Beans with Olive Oil, Lemon, and Parmesan

Savory Garlic Green Beans with Lemon and Parmesan

– 1 lb (450g) fresh green beans, trimmed
– 3 cloves garlic, minced
– 2 tablespoons olive oil
– Zest and juice of 1 lemon
– 1/4 cup grated Parmesan cheese
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)

1. Bring a large pot of salted water to a boil. Add the green beans and blanch for 2-3 minutes until they are bright green and just tender. Drain and immediately plunge them into a bowl of ice water to stop the cooking process. Drain again and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
3. Add the blanched green beans to the skillet and toss to coat with the garlic and olive oil. Sauté for 3-4 minutes, stirring occasionally, until the beans are heated through.
4. Remove from heat and drizzle with lemon juice and zest. Sprinkle with grated Parmesan cheese and season with salt and pepper to taste.
5. Transfer to a serving dish and garnish with fresh parsley. Serve immediately.
