Ingredients:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 1 cup beef broth
- 1 teaspoon thyme, dried
- 1 cup Gruyère cheese, shredded
- Salt and pepper to taste
- 1 tablespoon butter
- 2 cloves garlic, minced
- 1/2 cup white wine (optional)
Directions:
- Preheat oven to 375°F (190°C).
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the onions, and cook, stirring occasionally, until caramelized, about 15-20 minutes. Add garlic, thyme, and white wine (if using). Cook until the wine is mostly evaporated.
- In the meantime, cut a pocket into the side of each chicken breast. Season with salt and pepper.
- Stuff each chicken breast with the caramelized onion mixture and Gruyère cheese. Secure with toothpicks if necessary.
- In the same skillet, heat the remaining olive oil and butter over medium-high heat. Sear the chicken breasts on each side until golden, about 2-3 minutes per side.
- Transfer the chicken breasts to a baking dish. Pour beef broth into the skillet, scraping up any browned bits. Bring to a boil and then pour over the chicken in the baking dish.
- Bake for 20-25 minutes, or until the chicken is cooked through.
- Remove toothpicks, slice, and serve.
