Indulgent Creamy Garlic Scallops in Tuscan Style

– 1 lb scallops, patted dry
– Salt and pepper to taste
– 2 tablespoons olive oil
– 4 cloves garlic, minced
– 1/2 cup sun-dried tomatoes, chopped
– 1 cup heavy cream
– 1/2 cup grated Parmesan cheese
– 2 cups fresh spinach
– 1 teaspoon dried Italian herbs (such as basil, oregano, and thyme)
– Fresh parsley, chopped (for garnish)

1. Season the scallops with salt and pepper to taste.
2. In a large skillet, heat the olive oil over medium-high heat. Add the scallops to the skillet and cook for 2-3 minutes on each side, or until golden brown and cooked through. Remove the scallops from the skillet and set aside.
3. In the same skillet, add minced garlic and cook for 1-2 minutes until fragrant.
4. Add the chopped sun-dried tomatoes to the skillet and cook for another 2-3 minutes.
5. Pour in the heavy cream and bring to a simmer. Cook for 3-4 minutes, stirring occasionally, until the sauce starts to thicken.
6. Stir in the grated Parmesan cheese until melted and combined.
7. Add the fresh spinach and dried Italian herbs to the skillet. Cook until the spinach wilts, about 2 minutes.
8. Return the cooked scallops to the skillet and toss gently to coat them in the creamy sauce.
9. Cook for an additional 2-3 minutes, until the scallops are heated through.
10. Garnish with chopped fresh parsley and serve hot.
