Luscious Creamy Penne with Spinach and Mushrooms

– 12 oz penne pasta
– 2 tablespoons olive oil
– 1 small onion, finely chopped
– 3 cloves garlic, minced
– 8 oz mushrooms, sliced
– 4 cups fresh spinach
– 1 cup heavy cream
– 1/2 cup grated Parmesan cheese
– 1/4 teaspoon ground nutmeg
– Salt and pepper to taste
– 1/4 cup fresh parsley, chopped (optional)

1. Cook the penne pasta according to the package instructions until al dente. Drain and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
3. Add the minced garlic and sliced mushrooms to the skillet. Cook for about 5-6 minutes, or until the mushrooms are tender and browned.
4. Stir in the fresh spinach and cook until wilted, about 2 minutes.
5. Reduce the heat to low and pour in the heavy cream. Simmer for 2-3 minutes, stirring occasionally.
6. Add the grated Parmesan cheese and ground nutmeg. Stir until the cheese is melted and the sauce is creamy.
7. Season with salt and pepper to taste.
8. Add the cooked penne pasta to the skillet and toss to combine with the creamy sauce. Cook for an additional 2 minutes to heat through.
9. Garnish with chopped fresh parsley, if desired, and serve immediately.
