Flavorful Chicken Scampi with Creamy Garlic Parmesan Rice

– 1 pound boneless, skinless chicken breasts, sliced into thin strips
– 1/2 cup all-purpose flour
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 3 tablespoons olive oil
– 4 cloves garlic, minced
– 1/2 cup white wine (or chicken broth)
– 1/4 cup fresh lemon juice
– 1/4 cup unsalted butter
– 1/4 cup chopped fresh parsley
– 2 cups cooked rice
– 1/2 cup grated Parmesan cheese
– 1/4 cup heavy cream
– Salt and pepper to taste

1. In a shallow dish, mix the flour, salt, and black pepper. Dredge the chicken strips in the flour mixture, shaking off any excess.
2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken strips and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
3. In the same skillet, add the minced garlic and sauté for 1-2 minutes until fragrant.
4. Pour in the white wine (or chicken broth) and lemon juice, scraping up any browned bits from the bottom of the skillet. Cook for 2-3 minutes until slightly reduced.
5. Stir in the butter and chopped parsley, then return the chicken to the skillet. Cook for another 2-3 minutes until the chicken is heated through and coated in the sauce.
6. Meanwhile, in a separate saucepan, combine the cooked rice, grated Parmesan cheese, and heavy cream. Stir over medium heat until the cheese is melted and the rice is creamy. Season with salt and pepper to taste.
7. Serve the chicken scampi over the garlic Parmesan rice and garnish with additional parsley if desired.
