Cheesy Garlic Parmesan Spinach Spaghetti Squash

– 1 medium spaghetti squash
– 2 tablespoons olive oil
– 4 cloves garlic, minced
– 4 cups fresh spinach
– 1/2 cup grated Parmesan cheese
– Salt and pepper to taste
– Red pepper flakes (optional, for garnish)

1. Preheat the oven to 400°F (200°C).
2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
3. Place the squash halves, cut side down, on a baking sheet lined with parchment paper.
4. Bake for 30-40 minutes, or until the squash is tender and easily pierced with a fork.
5. While the squash is baking, heat olive oil in a large skillet over medium heat.
6. Add the minced garlic and cook for 1-2 minutes, until fragrant.
7. Add the fresh spinach to the skillet and cook, stirring occasionally, until wilted.
8. Use a fork to scrape the cooked spaghetti squash into “noodles” and add them to the skillet with the spinach and garlic.
9. Toss the squash noodles with the spinach and garlic until well combined.
10. Stir in the grated Parmesan cheese until melted and creamy.
11. Season with salt and pepper to taste.
12. Serve hot, garnished with red pepper flakes if desired.
