Ingredients:
- 2 tablespoons butter
- 1 large onion, chopped
- 2 cups broccoli florets
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup chicken broth
- 2 cups cooked rice
- 1 cup cheddar cheese, shredded
- 1/2 cup bread crumbs
- Salt and pepper to taste
Directions:
- Preheat your oven to 350°F (175°C).
- In a large skillet, melt butter over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Add the broccoli florets to the skillet and cook until they start to soften, about 3 minutes.
- Stir in the cream of mushroom soup and chicken broth until well combined. Then, add the cooked rice and half of the cheddar cheese. Season with salt and pepper.
- Transfer the mixture to a baking dish. Sprinkle the remaining cheddar cheese on top, followed by the bread crumbs.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and the bread crumbs are golden brown.
