Decadent Creamy Spinach and Mushroom Casserole

– 1 lb fresh spinach, washed and chopped
– 8 oz mushrooms, sliced
– 2 tablespoons butter
– 2 cloves garlic, minced
– 1 cup heavy cream
– 1/2 cup grated Parmesan cheese
– 1/4 cup shredded mozzarella cheese
– Salt and pepper to taste
– 1/4 teaspoon nutmeg (optional)
– 1/4 cup breadcrumbs
– 1/4 cup grated Parmesan cheese (for topping)

1. Preheat oven to 375°F (190°C). Grease a 9×9 inch baking dish.
2. In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
3. Add the sliced mushrooms to the skillet and cook until they release their moisture and start to brown, about 5-7 minutes.
4. Stir in the chopped spinach and cook until wilted, about 2-3 minutes.
5. Reduce heat to low and pour in the heavy cream, grated Parmesan cheese, shredded mozzarella cheese, salt, pepper, and nutmeg if using. Stir until the cheeses are melted and the mixture is creamy.
6. Transfer the creamy spinach and mushroom mixture to the prepared baking dish and spread it out evenly.
7. In a small bowl, mix together the breadcrumbs and grated Parmesan cheese for the topping. Sprinkle the breadcrumb mixture evenly over the top of the casserole.
8. Bake in the preheated oven for 20-25 minutes, or until the casserole is bubbly and the top is golden brown.
9. Serve hot and enjoy!
