Zesty Lemon Garlic Chicken Meatballs with Fresh Spinach and Creamy Feta

– 1 lb ground chicken
– 2 cloves garlic, minced
– Zest of 1 lemon
– 1/4 cup breadcrumbs
– 1/4 cup crumbled feta cheese
– 1 cup fresh spinach, chopped
– 1 egg, beaten
– Salt and pepper to taste
– 2 tablespoons olive oil

1. Preheat oven to 375°F (190°C).
2. In a large mixing bowl, combine ground chicken, minced garlic, lemon zest, breadcrumbs, crumbled feta cheese, chopped spinach, beaten egg, salt, and pepper. Mix until well combined.
3. Shape the mixture into meatballs, about 1 inch in diameter.
4. Heat olive oil in a skillet over medium heat. Brown the meatballs on all sides, about 2 minutes per side.
5. Transfer the browned meatballs to a baking sheet lined with parchment paper.
6. Bake in the preheated oven for 12-15 minutes, or until the meatballs are cooked through and no longer pink in the center.
