Gourmet Balsamic Steak Salad with Gorgonzola and Grilled Corn

– 1 lb sirloin steak
– 1/4 cup balsamic vinegar
– 1/4 cup olive oil
– 2 cloves garlic, minced
– 1 teaspoon Dijon mustard
– Salt and pepper to taste
– 4 ears of corn, husked
– 6 cups mixed greens (arugula, spinach, romaine)
– 1/2 cup crumbled Gorgonzola cheese
– 1/2 red onion, thinly sliced
– 1/2 cup cherry tomatoes, halved
– 1/4 cup chopped fresh basil

1. Preheat your grill to medium-high heat.
2. In a small bowl, whisk together balsamic vinegar, olive oil, garlic, Dijon mustard, salt, and pepper.
3. Place the steak in a resealable plastic bag and pour half of the balsamic mixture over it. Seal the bag and marinate in the refrigerator for at least 30 minutes.
4. Brush the corn with olive oil and season with salt and pepper.
5. Grill the corn for 10-15 minutes, turning occasionally, until charred and tender. Remove from grill and let cool slightly before cutting the kernels off the cob.
6. Remove the steak from the marinade and grill for 4-5 minutes per side for medium-rare, or until desired doneness. Let the steak rest for 5 minutes before slicing thinly against the grain.
7. In a large salad bowl, combine mixed greens, Gorgonzola cheese, red onion, cherry tomatoes, grilled corn, and basil.
8. Arrange the sliced steak on top of the salad and drizzle with the remaining balsamic dressing.
9. Toss gently to combine and serve immediately.
