Decadent Creme Brulee Cheesecake

For the Crust:
– 1 1/2 cups graham cracker crumbs
– 1/4 cup granulated sugar
– 1/2 cup unsalted butter, melted

For the Cheesecake:
– 24 oz (3 packages) cream cheese, softened
– 1 cup granulated sugar
– 1 cup sour cream
– 3 large eggs
– 1 tablespoon vanilla extract

For the Brulee Topping:
– 1/4 cup granulated sugar

1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
3. In a large bowl, beat the cream cheese and sugar together until smooth and creamy. Add the sour cream and vanilla extract, mixing until well combined.
4. Add the eggs one at a time, beating just until blended. Pour the cheesecake batter over the crust in the springform pan.
5. Place the springform pan in a larger roasting pan. Fill the roasting pan with hot water halfway up the sides of the springform pan to create a water bath.
6. Bake for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.
7. Remove the cheesecake from the oven and water bath. Refrigerate for at least 4 hours, preferably overnight.
8. Before serving, sprinkle the 1/4 cup of sugar evenly over the top of the cheesecake. Use a kitchen torch to caramelize the sugar until it forms a crispy, golden-brown crust.
