Vibrant Mediterranean Quinoa Salad

– 1 cup quinoa
– 2 cups water
– 1/4 cup olive oil
– 2 tablespoons lemon juice
– 1 teaspoon dried oregano
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1 cup cherry tomatoes, halved
– 1 cucumber, diced
– 1/2 red onion, finely chopped
– 1/2 cup Kalamata olives, pitted and sliced
– 1/2 cup feta cheese, crumbled
– 1/4 cup fresh parsley, chopped

1. Rinse quinoa thoroughly under cold water. Combine quinoa and water in a medium saucepan. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes or until the water is absorbed and the quinoa is tender. Remove from heat and let it sit for 5 minutes, then fluff with a fork.
2. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper to make the dressing.
3. In a large mixing bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and parsley.
4. Pour the dressing over the salad and toss to combine.
5. Adjust seasoning with additional salt and pepper if needed. Serve immediately or chill in the refrigerator for an hour to allow flavors to meld.
