– 1 loaf of day-old bread, cubed
– 1 cup pecans, chopped
– 4 large eggs
– 2 cups milk
– 1 cup heavy cream
– 1/2 cup granulated sugar
– 1/4 cup brown sugar
– 1 tablespoon vanilla extract
– 1 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
– Pinch of salt
– 1/2 cup maple syrup
– 1/4 cup bourbon (optional)

1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
2. In a large mixing bowl, combine the cubed bread and chopped pecans.
3. In another bowl, whisk together the eggs, milk, heavy cream, granulated sugar, brown sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined.
4. Pour the egg mixture over the bread and pecans, making sure everything is evenly coated. Let it sit for about 10 minutes to allow the bread to soak up the liquid.
5. Transfer the mixture to the prepared baking dish and spread it out evenly.
6. In a small saucepan, heat the maple syrup and bourbon over medium heat until warmed through.
7. Drizzle the warm syrup mixture over the bread pudding.
8. Bake for 45-50 minutes, or until the pudding is set and golden brown on top.
9. Serve warm, optionally topped with whipped cream or a scoop of vanilla ice cream.
