Ingredients:
- 8 oz. mushrooms
- 1 clove garlic, minced
- 10 oz. spinach
- 4 large eggs
- 1 cup milk
- 2 oz. feta cheese
- 1/4 cup grated Parmesan
- 1/2 cup shredded mozzarella
- Salt and pepper to taste
- Non-stick spray
Directions:
- Preheat your oven to 350°F (176°C). Spray a pie dish with non-stick spray.
- Slice mushrooms and sauté with minced garlic in a skillet over medium heat until mushrooms are soft and all their moisture has evaporated.
- Gradually add spinach to the skillet, allowing it to wilt. Remove from heat and let the mixture cool slightly.
- In a medium bowl, whisk together eggs and milk. Stir in feta, Parmesan, and mozzarella. Season with salt and pepper.
- Spread the mushroom and spinach mixture into the bottom of the pie dish, then pour the egg and cheese mixture over the vegetables.
- Bake for 45 minutes, or until the quiche is golden brown on top and the center is set.
